Healthy chicken schnitzel recipe with salad is an easy and very tasty dish. When we don’t have too much time to spend in the kitchen and we need to get dinner ready in one hour, this seems to be a very good choice.

What we need:

Ingredients for the chicken schnitzel:

  • 600 g boneless chicken breasts;

  • 100 g plain flour;

  • 3 eggs;

  • 2 heaped tablespoons of sweet paprika;

  • 2 heaped tablespoons of sesame seeds;

  • 80 g butter;

  • a generous pinch of salt.

Ingredients for the side salad:

  • 4 medium tomatoes;

  • 1 cucumber;

  • 1 yellow pepper (the only reason I opted for yellow pepper is its colour);

  • 3 spring onions;

  • 1 lemon;

  • dried chives;

  • olive oil;

How to do it:

  1. Mixt the plain flour with the sweet paprika and the sesame seeds, in a deep plate.

  2. Beat the eggs, add the salt and mixt.

  3. Cut the tenderloin off of each breast, if any, and set it aside.

  4. Cut the chicken breast in half lengthwise and add it next to the tenderloins.

  5. Put the chicken breast on a cling film (plastic wrap), place another piece of cling film (plastic wrap) on top and flatten it. Pound the chicken breast with the flat side of a meat mallet until you get the thickness you want. If the chicken starts tearing up, then you should stop.

    Using cling film when pounding the meat controls cross-contamination when handling raw meat.

    Also, a good practice is to wash hands before and after handling raw meat.

  6. Add the butter in a pan and heat it slowly over medium.

  7. Defying the standard breading procedure, firstly dip the chicken breast in egg until well coated and then dredge it in the mixture of flour, sesame seeds and paprika.

  8. On a low temperature, fry the coated chicken breasts on both sides until golden brown. I also put a lid on the pan to keep the heat in.

    9. Take out the schnitzels on a paper towel-lined plate to drain excess butter.

For the salad: chop the tomatoes, cucumber, yellow pepper, spring onions, add olive oil and dried chives.
